Right this is a short post I decided to write since I have received so many comments from friends about my lil summer treats I usually make them for my 5year old baby boy (well OK, he isn’t a baby any more..) some say I am making it difficult for him to find a wife when he grows up lol… I say, I am just giving him a sophisticated taste, but really all of my treats are easy but delicious! here I go with the one we just made..
I used mini- waffles which you can find on the refrigerated section in your local supermarket and use any ice cream flavour of your choice, I used strawberry and coconut fudge. Simply pop the waffles in the toaster for a few minutes and when ready let cool slightly and place a spoonful of ice cream in the middle; close with another waffle and use sprinkles or chocolate chips to decorate… Easy, colourful yet refreshing summer snack either for little fingers of bigger ones!
Grape-lollies or Grapesicles:
use grapes of your choice but seedless are best. Place in wooden skewers until you cover all or almost all the area – to create a better visual effect you can alternate white and red grapes. then simply pop in the freezer and let the magic happen. there you have it healthy fruit “popsicles”
Ok fair enough not all kids are veggie lovers, but mine is and he totally loves this little salad on the go sticks. simply use cheery tomatoes, baby mozzarella balls and fresh basil, place on a small wooden skewer and there! it can also be a great party treat not just for kids but adults as well..
Jelly stuffed Strawberries:
originally I did tequila infused jelly strawberries for a dinner party, sort of like a strawberry margaritas miniature size. But this recipe can be changed for an alcohol free, kids friendly version. Simply make a small incision in the top of the strawberry make sure there aren’t any other holes or the jelly wont stay inside the fruit – its a delicate process but its well worth it. Make your favourite jelly flavour as directed on the package and use a straw to fill in the strawberries with the jelly mix (slightly cool) – place on a cupcake tray or anything that will keep them up straight and place in the fridge for the jelly to set. The end result is a super fresh strawberry with a delicious jelly centre! everyone will love them!
Just use your imagination and have fun with food, remember the way we present a dish can change people perceptions which is specially important for kids who can “judge” food by its appearance!
